Preheat oven to 350°. Line a square baking pan (9x9 inch) with parchment paper and lightly spray with baking spray. Set aside.
Sieve the dry ingredients i.e. flour, cocoa and baking powder in a bowl.
Whisk butter or oil and sugar together, in a large mixing bowl until white and fluffy.
Now in a small mixing bowl, whisk the yogurt, baking powder and vanilla extract.
Add the yogurt mixture to the whisked oil and sugar and fold the batter gently. Add the sieved dry ingredients and fold the batter gently. Not too many strokes.
Add about 3 teaspoon of Wilton red colour or beetroot extract (grate and squeeze for colour). Fold the batter gently until lumps dissolve. Do not overfold.
Transfer batter to the prepared pan.
Bake brownies for 25-30 minutes, or until toothpick inserted in center comes out with a few moist crumbs. Cool completely before frosting and cutting.
Remove brownies from the pan. Drizzle some white melted chocolate over top of brownies. Sprinkle with sprinkles and cut into 9 large squares and serve.
